primal meal planning on a budget

cartMonday I posted my grocery sneak peek on Facebook. With a shopping list in hand phone I managed to pick up everything we need for a week’s worth of healthy meals in 20 minutes.
This week’s trip cost $95 for a week’s worth of meals for J and I.
We’re usually at around $75 a week but I bought pork tenderloin that only comes two to a package and I was out of almond milk and dried figs ($7 a package but last forever) which are usually purchased monthly.

MONDAY Pork Tenderloin with Fig and Onion Jam, Bacon Wrapped Asparagus

TUESDAY Baked Salmon, Steamed Broccoli and Lemon Garlic Asparagus
salmonSimple. This is on the menu weekly. From fridge to table in under 25 minutes.

WEDNESDAY Barbacoa and Mashed Potatoes (sweet potatoes for me)barbacoaThis was delicious. I added wine to PaleoOMG’s recipe and used London broil because it’s all the grocery store had in stock.

THURSDAY Pineapple Roasted Chicken Thighs and Bacon Wrapped AsparaguspineapplechickenI marinated chicken thighs in honey, mango jalapeno chutney, minced garlic and lemon juice then baked at 425 degrees for 45 minutes, flipping halfway. I added the pineapple slices in the last half of cooking and turned the broiler on for the last five.

FRIDAY Out at The Blackhorse Pub and Brewery in Downtown Clarksville

SATURDAY Paleo Spaghetti and MeatballspaleospaghettiSuper simple. I use a julienne peeler to make noodles from zucchini for me, and cook regular spaghetti for J. I sauté those in a little bit of TJ’s coconut oil spray, salt and pepper and then top with my homemade spaghetti sauce. My meatballs are an adaptation of Devin Alexander’s meatballs: ground beef, minced garlic and onions, Worcestershire sauce, Liquid Smoke and parmesan cheese baked at 425 for 20 minutes.

Breakfast is usually some combination of eggs with bacon or turkey sausage or a green smoothie. Lunches are usually salads for me or a protein with steamed veggies. Sandwiches or leftovers for him.

Into the shopping cart went:
Zucchini (2)
Bananas (3)
Cored Pineapple (same price as whole)
Bagged romaine
Bagged spinach
Sockeye salmon (on sale, only $1 more than farmed!)
Shrimp (1 lb.)
Deli meat and cheese for J’s lunch

Pork tenderloin (2, one for this week, one for the freezer)
Ground beef
London broil
Roasted chicken thighs
Grand total: $94.71

Always in the fridge:
Plain Greek yogurt
Eggs (lots of them)
Some sort of berries
cut up melon

Planning for the week keeps me accountable but it also keeps us on budget. We’re less likely to head out to eat or order something unhealthy in when everything is ready to go.

recipe: bbq chicken pizza on cauliflower crust

Barre method class (55 min.)

I drove to Barre54 this morning to check out the studio’s classes (review to come soon).
Last night I made this BBQ chicken pizza adapted from Closet Cooking and it’s a must share. I bought a head of cauliflower last week and it’s been sitting in the fridge waiting for me to do the work and turn it into magic paleo “bread”. This pizza was just as good as the one I was craving from Domino’s and the crust can easily be adapted for other pizzas with different toppings.
For the crust:
1 head of cauliflower
1 egg
1/2 cup mozzarella
1/2 tsp. dried oregano
1/4 tsp. dried basil
1/4 tsp. dried rosemary
a pinch of crushed red pepper
2 cloved of minced garlic

For the BBQ chicken topping:

1 cup cooked chicken breast
1/2 cup BBQ sauce
1 tbsp. chopped green onion
1/2 cup shredded mozzarella (could do 50/50 with cheddar too)
1/4 sliced Vidalia onion

1. Pulse one head of cauliflower florets in a food processor until it looks like rice. Transfer to a microwave-safe bowl and cook for eight minutes.
2. Place the caulifower between paper towels to remove as much of the moisture as possible.
3. Mix the cauliflower, one egg, 1/2 cup mozzarella, 1/2 tsp. dried oregano, 1/4 tsp. dried basil, 1/4 tsp. dried rosemary, a pinch of crushed red pepper and two cloves of crushed garlic until dough-like. Form into a crust on a baking sheet sprayed with Pam.
4. Bake in a preheated 450 degree oven until lightly golden brown, about 18 minutes (turning once *extra carefully* halfway).
5. Top with your choice of toppings and bake another 10 to 15 minutes. I used 1 cup cooked chopped chicken breast in 1/2 cup of barbecue sauce, 1/2 cup shredded mozzarella, 1 tbsp. chopped green onion and 1/4 Peruvian yellow onion sliced thin.

Try it out and let me know how it comes out. I’ll be making this again soon with fig jam and gorgonzola (also super delicious).

I got kicked out of LA Fitness Sunday night. I didn’t even know they did that.20130303_200341Before LA Fitness decided they didn’t want me anymore I spent the day with Loi at the Southern Exposure Conference Expo at the Caribe Royale. 20130302_175312We didn’t expect to be there for very long but there were so many booths and so many people to talk to. Not to mention SO MUCH PRODUCE. There were a lot of fruits and vegetables that I’d never heard of but would be interested in trying, like these purple sweet potatoes. Pretty, no?20130302_152101We both came home with so much produce and “produce companion items”. I was psyched to get two bottles of my favorite Boathouse Farms yogurt dressing. If you follow me on Facebook you know how addicted I am to the stuff.20130302_195921I also got some perfectly ripe avocados, an opal apple and some delicious Vidalia potato chips and Peruvian onions. Mmm. So good.
I used one of the onions and some of the avocado to make a super tasty BBQ chicken pizza on a cauliflower crust for dinner tonight.
It was just as good as the Domino’s I was craving and half the calories.
